Unable to open documents with microsoft word online
Usually there is the option to open a .docx file with microsoft word online in order to make edits, but that option has disappeared for me

If you are making edits in this problem folder in which your collaboration permission level is "Viewer" then yes, which is expected behavior due to the Collaborator permission of a user limited as a "Viewer", they won't be able to open the file to edit.
